Ingredients for two portions

500 ml plant-based drink (we used soy drink)
75 g organic spelt semolina, e.g. from Bauck
2 tbsp sugar
1 pinch of salt
200 g oyster mushrooms
a little sesame oil
1 tbsp turmeric cabbage
1 tbsp mild kimchi
This is how we proceed

- First, pour the plant-based drink into a pot and heat it up. Stir in the spelt semolina together with the sugar and salt and bring to the boil, stir until the spelt semolina porridge thickens.
- Meanwhile, clean the mushrooms and sauté in a pan with a little sesame oil.
- Divide the spelt semolina porridge between two bowls, add the mushrooms and garnish each with a tablespoon of turmeric cabbage and mild kimchi.
