Overnight oats with red goji beet

Start your day colorful and full of energy! Fermented overnight oats with red goji beet, apple-cinnamon pieces and peanut butter – delicious, easier to digest and ideal for a sensitive stomach.

Ingredients per jar

6 tbsp rolled oats (gluten-free e.g. from Bauck)
water for the fermentation
100 ml plant-based milk
1 half apple
a little cinnamon
1-2 tbsp red goji beet
1 tbsp peanut butter

This is how we proceed

  1. Rinse the rolled oats thoroughly under running water.

  2. Then put them in a container with enough water, cover it lightly and leave the mixture to soak at room temperature for at least 12 hours. We use a mixing ratio of one part rolled oats to three parts liquid.

    A little tip: The longer the oats ferment, the more intense the sour taste will be. Fermentation makes the oats more digestible and is particularly suitable for sensitive stomachs.

  3. After soaking, rinse the oats thoroughly in a sieve and pour away the soaking water.

  4. Mix the fermented oats in a glass with plant-based milk before eating. Halve an apple, cut it into small pieces, season with cinnamon and add everything to the glass.

  5. Finally, add some red goji beet and peanut butter and enjoy!
