Ingredients

250 g beluga lentils
1 chicory
100 g lamb's lettuce
1 handful of fresh basil
4 tbsp olive oil
3 tbsp white wine vinegar
salt & pepper
1 jar of cucumber kimchi
This is how we proceed

- Rinse the beluga lentils in a sieve and cook them in a pan without salt for approx. 30 minutes.
- Wash the lamb's lettuce, basil and chicory and chop the chicory into small pieces.
- As soon as the beluga lentils are ready, drain and leave to cool briefly.
- Place the beluga lentils, lamb's lettuce, chicory, basil and our crunchy cucumber kimchi in a large salad bowl and mix everything together.
- Finally, season the beluga lentil salad with olive oil, white wine vinegar, salt and pepper.
