Beluga lentil salad with cucumber kimchi

Do you miss fresh cucumbers in winter? This delicious, high-fiber winter salad combines crunchy cucumber kimchi for your gut health with nutrient-rich beluga lentils, chicory, lamb's lettuce and fresh basil - pure vitality on your plate!
Ingredients

250 g beluga lentils
1 chicory
100 g lamb's lettuce
1 handful of fresh basil
4 tbsp olive oil
3 tbsp white wine vinegar
salt & pepper
1 jar of cucumber kimchi

This is how we proceed

  1. Rinse the beluga lentils in a sieve and cook them in a pan without salt for approx. 30 minutes.
  2. Wash the lamb's lettuce, basil and chicory and chop the chicory into small pieces.
  3. As soon as the beluga lentils are ready, drain and leave to cool briefly.
  4. Place the beluga lentils, lamb's lettuce, chicory, basil and our crunchy cucumber kimchi in a large salad bowl and mix everything together.
  5. Finally, season the beluga lentil salad with olive oil, white wine vinegar, salt and pepper.
